mindful indulgence - my home made magic bread!

Here’s my super simple fat-free natural yogurt bread recipe that’s soft, fluffy, and high in protein. 


It requires minimal ingredients and no yeast! prep in 5 minutes + bake!


Yogurt bread has several benefits due to the combination of yogurt and whole grains (if used). 


Here are some key advantages:


1. Improved Digestion

• Yogurt contains probiotics (healthy bacteria) that support gut health and digestion.

• If using whole-grain flour, it adds fiber, further aiding digestion.


2. Increased Moisture & Softness

• Yogurt makes bread softer and more tender by adding moisture.

• It helps keep the bread fresh for longer without drying out quickly.


3. Higher Protein Content

• Yogurt boosts the protein content of the bread, making it more filling and nutritious.

• Greek yogurt, in particular, adds more protein than regular yogurt.


4. Better Nutrient Absorption

• The lactic acid in yogurt helps break down phytic acid in whole grains, making minerals like iron and calcium more bioavailable.


5. Lower Fat & Healthier Alternative

• Yogurt can replace butter or oil in recipes, reducing overall fat content while maintaining richness.

• It adds a slight tangy flavor, enhancing taste without excessive sugar or fat.


Ingredients:

• 2 cups self-rising flour (or 2 cups all-purpose flour + 2 tsp baking powder + ½ tsp salt)

• 1 cup fat-free natural yogurt

• 1 tbsp honey or sugar (optional, for slight sweetness)

• a dash of water or milk (only if needed for consistency)

Contains dairy / Flour may contain gluten

Switch to vegan natural yoghurt or gluten free flour if applicable


Instructions:

1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. Mix ingredients in a bowl until a dough forms. If it’s too dry, add a little water/milk.

3. Knead lightly on a floured surface for about 2 minutes until smooth.

4. Shape into a loaf or divide into rolls.

5. Bake for 25-30 minutes (for a loaf, 35-40 minutes) until golden and firm.

6. Cool on a wire rack before slicing.


This bread is soft, slightly tangy from the yogurt, and perfect for sandwiches or toast. 


Want to add any flavours like herbs or garlic? I like to add poppy seeds and 1tbsp beetroot powder or @juxfood beetroot and red onion pieces to the mix for a colourful avocado on toast companion.

...try my 'peshwari naan inspired' coconut bread [add 1 cup desiccated coconut and 1/2 cup crushed mixed fruit and nuts to basic recipe [add 5 minutes to baking time as coconut can quite moist] 

 or

add 1 cup ground almonds and 1tsp vanilla extract to the basic recipe and serve up a 'bakewell inspired' almond bread served toasted with raspberry jam!
